Caribbean Chicken and Sweet Potatoes

3-4 boneless chicken breast, washed with fat removed and cubed

1/2 onion chopped

1/4 cup minced jalapeno pepper ( I used canned or you can move seeds and dice one fresh)

2-3 large sweet potatoes cubed

1 can garbanzo beans or chickpeas, drained and rinsed

1 1/2 cups of chicken broth

1 can unsweetened coconut milk (found in the Asian cooking section)

2 tsp salt

1 tsp ground cumin

1 tsp dried thyme

1 tsp black pepper

1/2 tsp all spice or Caribbean spice ( I used “Slap ya Mama”)

2 cloves garlic, minced



1 lime juiced

1/3 cup fresh cilantro



Place everything but sweet potatoes in the bottom of the crock pot. Place sweet potatoes on top. Cook for 6-8 hours on low.
