Greek Fish

Greek Fish
Ingredients:
4 Tilapia or cod, haddock, pollack, white fish, washed
1/4 cup Olive oil
2 slices of Ezekiel bread- torn or chopped up
4 cloves garlic, finely chopped
1 sprig oregano, chopped or 1 tsp dried oregano
Hand full of parsley, chopped
1 roasted red pepper, chopped (can buy a jar of roasted peppers if you want)
1 chili pepper, chopped
Hand full of pitted kalamata olives, chopped
1/2 medium red onion, chopped
1/2 cup fat free feta cheese
1 lemon, cut into wedges

 

Directions
1. Pre-head oven to 400 deg

2. Roast pepper in the oven for 5-10 minutes or drain can of roasted peppers.

3.Combine bread, garlic, oregano, parsley, red pepper, chili pepper, olives, onions in a bowl and add olive oil.
4. Put fish in baking dish and lightly spray with oil, season with salt and pepper. Add mixture over top fish. Scatter feta and bake for 20-25 minutes.
Lemon wedges are served with fish. Enjoy!
